Cosy vegan soup recipes become a staple in my home during the colder, darker months and these are some of my favourites.
Not only are they healthy and easy to prepare, they make the most of some of the best in season ingredients to bring you big bowls of comfort! It’s also worth noting that these vegan soup recipes are all freezer friendly. So while you’re chopping, stirring and blitzing, double up on ingredients and have some staples ready to go for those even busier days.
I’m a huge fan of meal planning and food prep. Because life has its inevitable way of happening and even when you plan, well, plans can change. So knowing there’s something quick, healthy, hearty and comforting in the freezer can mean there’s one less thing on your proverbial plate.
At this time of the year I think we all look forward to curling up with a bowl of something warm and comforting. And whether you like creamy soups, chunky soups, one pot soups or soups where the veg is roasted first, I’ve got something for everyone here. They’re all vegan and all delicious!
Roasted Pumpkin Soup
Easy to make but tastes amazing, this Pumpkin Soup with herbs, garlic and extra veggies is the perfect healthy bowl to warm you up during the chilly months!

How to store and reheat any leftover soup
Store in airtight containers and once cooled, store in the fridge for up to 5 days. Reheat on the stove or in a microwave.
Can these soups be frozen?
YES! Almost all soups can be frozen making them a great staple to have on hand in the freezer. Store in an airtight container or freezer bag. Thaw in the fridge and reheat as normal.
