Apple Crumble Oats

Prep: 10 mins | Cook: 10 mins | Total: 20 mins | Quantity: 2 servings

Ingredients

  • 1 tblsp coconut oil or vegan butter
  • 4 medium apples – peeled, cored and roughly diced
  • 1 cup (80g) porridge oats
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1-2 tblsp choice of sweetener – maple or agave syrup, coconut sugar etc
  • 1 + 1/2 cups (360ml) plant milk

Optional to serve:

  • 4-6 tblsp vegan yoghurt
  • extra fresh fruit – bananas, warm blackberries etc
  • something for crunch – toasted seeds, homemade granola etc

Instructions

  1. Melt the coconut oil or vegan butter in a medium pan
  2. Add the chopped apples, stir and cook for 5-6 minutes over a low-medium heat, stirring from time to time until just softened and starting to caramelise
  3. Add the oats, spices, sweetener and milk and give everything a good stir
  4. Bubble for 2-3 minutes until the milk is absorbed
  5. Spoon the yoghurt into your serving bowl and top with the apple crumble oats
  6. If using, top with the extra fruit and crunch
  7. Enjoy!

Notes

  • You can make extra and store in the fridge - this re-heats very well in the microwave!
