Carbonara Ramen

Prep: 10 mins | Cook: 15 mins | Total: 25 mins | Quantity: 2 servings

Ingredients

  • 4 slices vegan bacon
  • 1 teaspoon oil
  • 4-5 cloves garlic
  • 1/2 cup (125ml) vegetable stock
  • 2 portions ramen noodles
  • 1/2 cup (125ml) vegan cream
  • 1/2 cup (20g) vegan parmesan (grated weight)
  • 1 tablespoon chopped chives
  • salt and pepper

Instructions

  1. Heat a wok then fry the bacon on both sides until cooked and crispy. Remove from the pan and chop into small pieces. Set aside
  2. No need to clean the wok, add the oil then saute the garlic for 1-2 minutes
  3. Add the vegetable stock and bring to the boil. Add the ramen noodles and cook until soft. If you're using straight to wok noodles, just cook them until they're warmed through
  4. Stir in the cream and parmesan
  5. Return the chopped bacon to the pan then stir that in with the chopped chives and salt and pepper to taste
  6. Serve immediately
