Smash Tacos

Prep: 10 mins | Cook: 20 mins | Total: 30 mins | Quantity: 8 small tacos

Ingredients

  • 1 x 300g pack vegan mince
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chilli powder (optional)
  • 1 teaspoon dried oregano
  • 1 small red onion
  • pinch each of salt and pepper
  • handful grated vegan cheese
  • oil
  • 8 small tortillas

To serve:

  • Shredded lettuce
  • sliced avocado
  • tzatziki sauce (or sub with just vegan mayonnaise)

 

Instructions

  1. Put the mince into a bowl along with garlic powder, smoked paprika, chilli powder (if using), oregano, salt and pepper and grated cheese
  2. Mix everything really well together then shape into 8 roughly equal sized balls
  3. Heat a drizzle of oil in a frying pan large enough to fit the tortilla
  4. Place in a meatball then top with one of the tortillas. Flatten slightly with your hand then use a large saucepan to push down on the burger until it's flattened quite thin
  5. Fry for 4-5 minutes until cooked through then flip and cook for a further minute
  6. Lift onto a plate and add the toppings
  7. Repeat for the remaining meatballs
