Ingredients
Oil
1 red onion – finely diced
2 cloves garlic – peeled and crushed
400g (2 cups) cooked quinoa (see note)
400g tin (1 cup drained weight) cannellini beans
small handful fresh basil
1-2 tsp mustard
75g (1/3 cup) sun dried tomatoes
4 tblsp flour – plain white, plain wholemeal or any gluten free flour
1 heaped teaspoon smoked paprika
salt and pepper
Instructions
Saute the onion and garlic with a drizzle of oil in a small pan for a few minutes until just starting to soften
Tip into a food processor along with the remaining ingredients, adding a good pinch each of salt and pepper
Pulse until well mixed together
Divide into 8 pieces then shape into burger patties
Heat another drizzle of oil in a large frying pan and cook the burgers for 8-10 minutes on each side until crisp and golden
Alternatively place the burgers on a lined baking tray and cook in a preheated oven (180 Fan / 200 C / 400 F / Gas 6) for 30-35 minutes
Serve immediately
Notes
For 400g (2 cups)of cooked quinoa: boil 240g (1 cup) of uncooked quinoa with 480ml (2 cups) water or vegetable stock for 15-20 minutes until all the liquid has been absorbed
If you're making these ahead of cooking you can chill the mix and shape and fry later or shape into patties before chilling (keep the burgers separate using pieces of parchment/greaseproof
