Blackberry, Goat's Cheese & Pine Nut Toasts

I can’t tell you how happy I am that it’s finally autumn. Autumn is hands down my favourite season. I love the colours, the smells, the changing leaves, the crisp mornings, the darker evenings, candles and copious amounts of hot chocolate. I also love all the food that’s coming into season. We’re lucky enough to have wild blackberries growing next to our house and while I don’t want to deprive the birds of their free food I think they can manage without the handful needed to make these toasts.
Don’t worry, I put out extra seeds and the occasional bit of baked pastry trimming 😉
But oh my gosh I SO hope you try making these. The combination of creamy vegan goat’s cheese and sharp blackberries is damn near perfect. First time I tried this I let out an actual moan. It was audible. I was glad I was on my own.
It also doesn’t seem to matter how much toast I’ve eaten in my life time – and it’s like a lot a LOT – it never gets boring. Maybe because there’s so many things you can put on top of it. But THIS combination is something else. It starts with a good base. I’ve used this Oaty Wholemeal Bread – it has just the right amount of crunch when toasted and it’s oaty sweet flavour is a perfect match for the creamy, sharp, fruity topping. A sprinkle of finely sliced spring onions, some shredded basil, some crunchy toasted pine nuts and you have a few moments of foodie heaven delivered right to your mouth!

Blackberry, Goat's Cheese & Pine Nut Toasts

Ingredients
- handful of fresh (or frozen) blackberries
- 1 tsp maple syrup
- handful of pine nuts
- 2 thick slices crusty wholemeal bread
- 1 spring onion
- few basil leaves
- 2 tblsp vegan goat’s cheese or cream cheese
- Sea salt and black pepper
Instructions
- Put the blackberries into a small saucepan with the maple syrup and gently warm for a couple of minutes
- Put the pine nuts in a small frying pan and toast over a low flame for a couple of minutes - keep your eye on these, they have a tendency to be perfectly cooked one minute and black the next! Stir or toss a few times while toasting
- Thinly slice the spring onion and shred the basil leaves
- When you're ready to assemble toast your bread, thickly spread over the goat's cheese, sprinkle over the spring onion, basil and pine nuts then top with the warm blackberries
- Sprinkle over just a small pinch of salt and a couple of grinds of fresh black pepper
- Enjoy! :)
