Acai and Blueberry Smoothie Bowl

Refreshingly delicious start to the day whizzed up in just a couple of minutes! This blueberry smoothie bowl boasts fruity acai powder for some extra antioxiant zing!
Are you longing for summer days when ice cream for breakfast is perfectly acceptable? I say acceptable because with a blueberry smoothie bowl that’s exactly what it feels like! Thick, frosty, smooth, naturally sweet and OH SO refreshing. And because it’s currently winter as I type I suggest you sit with your back up the radiator as you eat this and imagine it’s the sun beating down.
Unless of course you live in Australia where you can actually sit out in the sun and eat this! Here in Blighty though it’s f-f-freezing. And wet. And mostly grey.
But with this colourful bowl of deliciousness my morning is brightened considerably. And just like this Tropical Fruit Smoothie Bowl, it takes literally seconds to whizz up! You could always have the ingredients as just a plain old whizzed up smoothie. But seriously, where’s the fun in that?? Part of being an adult is having what you want, when you want it (within reason, time and budget) and guilt free ice cream for breakfast feels like a seriously adult thing that the kids can enjoy right along with you.
Health Benefits of Blueberries
Often touted as a ‘superfood’ blueberries was one of the first fruits to be given this title. They’re an excellent source of Vitamin C, soluble fibre and phytochemicals. These are natural compounds that give blueberries their wonderful colour and antioxidant properties.
I’ve also included Organic Acai Berry Powder from Revolution Foods because of its incredible antioxidant properties as well. “What are antioxidants?” you might well ask. Simply put they’re molecules that fight damage to your body on a cellular level from such things as air pollution, intense physical exercise and UV rays. Over time, cellular damage can result if we’re exposed to more of these ‘stresses’ than the body can handle. Naturally increasing your antioxidant reserves through eating whole foods can help suppress or even work to repair the damage once it has been done.
And because it just adds to the wonderful berry-ness of this deliciously refreshing all natural (yet deceptively filling!) breakfast … pass the spoon please!

Acai and Blueberry Smoothie Bowl

Ingredients
- 1-2 bananas – peeled, sliced and frozen
- 1 large handful frozen blueberries
- 1 tblsp Revolution Foods Organic Acai Berry Powder
- 1 cup almond milk
- Blender or juice extractor – we love our Nutribullet RX!
Instructions
- Simply throw all the ingredients into a blender and whizz until smooth
- Pour into a chilled bowl and top with your favourite fruits, nuts, seeds etc
- Enjoy!
Notes
- If you want it to be more sorbet like than ice cream you can substitute the almond milk for coconut water!
