Packed with fresh strawberry flavour, these super easy, fluffy vegan strawberry pancakes are worth getting out of bed for!

Are you a morning person? I am not and never have been. But honestly, knowing there’s not just pancakes but fluffy vegan strawberry pancakes really does make abandoning my warm bed and Baxter cuddles a little easier.

Plus they’re pink.

How to make egg free pancakes

Vegan pancakes really CAN be just as fluffy, easy and delicious as those with eggs. I use a combination of a couple of things to get those pancakes sky high. First is baking powder, this gives them the rise. Then adding apple cider vinegar with baking soda causes a (natural) chemical reaction which gives them that wonderful fluffy texture. The vinegar also reacts with the milk, turning it into a sort of vegan buttercream, giving the pancakes a wonderfully rich flavour. And don’t worry, I promise you can’t taste the vinegar.

Making vegan pancakes really is as easy as popping it all into a blender and letting that do the hard work. I normally just whisk vegan pancake batter that’s made with flour rather than oats but because I wanted to have fresh strawberries blended INTO the batter (because pink pancakes) the blender had to come out.

Cooking the strawberry pancakes

Once you’ve blended your pancake batter (and admired its gorgeous pinkness for a moment) heat a large frying pan with a spray or drizzle of oil over a medium heat.

Add large spoonfuls of batter, gently spreading into a circle shape. Leave yourself enough room in the pan to be able to flip the pancakes.

Add a slice (or slices) of fresh strawberries to the uncooked top side of the pancakes and gently press it into the batter. You could also stir diced strawberry through the batter before cooking instead.

Cook for a couple of minutes until bubbles start to form on the top side then carefully – but with intention – flip your pancakes over.

Side note: for years I’ve used a metal fish slice style spatula to flip everything from burgers to pancakes to fritters. But I’ve just bought myself a considerably more flexible wide silicon spatula flipper thing and what a game changer! Makes flipping anything a flipping doddle!

Continue cooking the pancakes until you’ve used all the batter. Keep the cooked pancakes warm in a low oven or reheat in the microwave.

Fluffy Vegan Strawberry Pancakes

Ingredients

  • 240ml (1 cup) plant milk
  • 1 tablespoon apple cider vinegar
  • 200g fresh strawberries
  • 290g (2 cups) plain flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 50g (1/4 cup) caster sugar
  • 1-2 teaspoons ground cinnamon
  • To serve: vegan yoghurt, maple syrup

Instructions

  1. Put the milk and vinegar into a blender cup and give a quick whisk
  2. Remove the green stalks from the strawberries. Set 4-5 aside, then and add the rest in a blender cup (halve any particularly large strawberries) along with the flour, baking powder, baking soda, sugar and cinnamon
  3. Blend to a smooth but thick batter. I transfer the batter from the blender cup to a jug to make it easier. Slice the reserved strawberries
  4. Heat a large frying pan with a small drizzle of oil then add spoonfuls of batter, gently pushing into a circle shape. Leave enough room in the pan for flipping the pancakes
  5. Add one or two slices of fresh strawberry to the top of the pancake, gently pushing into the batter
  6. Cook for a couple of minutes until bubbles form on the top side then carefully but confidently flip the pancakes over. Cook for another minute or two on the other side
  7. Repeat the process until you've used up all the batter
  8. Keep the cooked pancakes warm in a low oven or reheat in the microwave

Notes

  • Instead of adding the sliced strawberries to the pancakes as you cook them, you can dice the reserved strawberries and add to the batter before cooking
