Carbonara Ramen

If you like simple, one pan meals with minimal ingredients but no compromise on flavour you’ll love this vegan carbonara ramen!
If you’ve been following my easy, one pan meal series, this carbonara ramen is perhaps the easiest! It needs only a handful of simple ingredients and using ramen noodles means it can all be cooked in around 20 minutes. It’s perfect nourishing food after a busy day but tastes special enough for date night too!
I first made this carbonara just after Christmas. You know, that period when you’re sort of sick of food (and cooking) but do still sometimes get hungry in between all the snacks. There came a point where I started craving real food, rather than just grazing directly from the fridge. But I also really couldn’t be bothered with too much fuss. Or washing up. I was also waiting on a shopping delivery so had to use what ingredients I had.
So a half used pack of vegan bacon, a half used carton of vegan cream and a pack of ramen noodles quickly became carbonara ramen! And honestly, there really aren’t many more ingredients outside of those three.
How to make this easy one pan meal:
I use a wok for pretty much one reason – so that the liquid is deep enough to cook the ramen noodles without the need for another pan to cook them separately in! This recipe makes enough to serve two so if you’re doubling (or more!) up you could probably get away with using an ordinary saute or frying pan. Or stick with a wok. You do you.
Heat the wok then sizzle the vegan bacon for a few minutes until nice and crips, turning so it’s well cooked on both sides. Tip out of the pan, chop into pieces and set aside.
DON’T CLEAN THE WOK!
Into the wok put a drizzle of oil then fry the garlic for a minute or two.
Add the stock and heat until bubbling then add the noodles and cook until soft, making sure they’re well coated in the sauce. If you’re using straight to wok noodles then all you need to do is warm them through.
Stir in the cream and parmesan.
Return the chopped bacon to the pan and add the chopped chives and salt and pepper. Stir well and serve immediately.

Carbonara Ramen

Ingredients
- 4 slices vegan bacon
- 1 teaspoon oil
- 4-5 cloves garlic
- 1/2 cup (125ml) vegetable stock
- 2 portions ramen noodles
- 1/2 cup (125ml) vegan cream
- 1/2 cup (20g) vegan parmesan (grated weight)
- 1 tablespoon chopped chives
- salt and pepper
Instructions
- Heat a wok then fry the bacon on both sides until cooked and crispy. Remove from the pan and chop into small pieces. Set aside
- No need to clean the wok, add the oil then saute the garlic for 1-2 minutes
- Add the vegetable stock and bring to the boil. Add the ramen noodles and cook until soft. If you're using straight to wok noodles, just cook them until they're warmed through
- Stir in the cream and parmesan
- Return the chopped bacon to the pan then stir that in with the chopped chives and salt and pepper to taste
- Serve immediately
