Easy Asparagus Puff Pastry Tarts - Vegan and Delicious!

Ingredients

  • 105g (1/2 cup) vegan cream cheese
  • 1 tablespoon cornflour
  • 2 teaspoons garlic granules
  • 2 teaspoons onion granules
  • few sprigs fresh thyme (or sub 1 teaspoon dried thyme or rosemary)
  • 15g (1/4 cup) vegan parmesan – grated
  • salt and pepper
  • 1 sheet of shop bought vegan puff pastry
  • approx 12 spears of asparagus
  • 2 teaspoons plant milk
  • small pinch turmeric
  • sesame seeds
  • drizzle of oil

Instructions

  1. Preheat your oven to 180 Fan / 200 C / 400 F / Gas 6 and line one or two baking trays with parchment or silicon mats
  2. Mix the cream cheese with the cornflour, garlic and onion granules, herbs, parmesan and a pinch each of salt and pepper
  3. Remove any woody, tough parts off the asparagus then cut each spear into 3 equal size pieces
  4. Unroll the sheet of puff pastry and cut into 8 equal portions. Lay the rectangles on your lined trays - you can put them fairly close together, they rise but don't spread much!
  5. Divide the cream across the rectangles then spread so it covers the middle leaving 2cm (3/4 inch) border clear all the way round
  6. Lay the asparagus spears on top of the cream cheese - 4 pieces per tart (you'll have a couple of spare bits - a couple of lucky tarts get 5 pieces!)
  7. Mix the milk and the turmeric together then brush round the border of each tart. Sprinkle over the sesame seeds
  8. Drizzle just a little oil over the asparagus then bake the tarts for 15-20 minutes until puffed, crisp and golden
