Vegan Soup Recipes

Cosy vegan soup recipes become a staple in my home during the colder, darker months and these are some of my favourites.

Not only are they healthy and easy to prepare, they make the most of some of the best in season ingredients to bring you big bowls of comfort!  It’s also worth noting that these vegan soup recipes are all freezer friendly. So while you’re chopping, stirring and blitzing, double up on ingredients and have some staples ready to go for those even busier days.

I’m a huge fan of meal planning and food prep. Because life has its inevitable way of happening and even when you plan, well, plans can change. So knowing there’s something quick, healthy, hearty and comforting in the freezer can mean there’s one less thing on your proverbial plate.

At this time of the year I think we all look forward to curling up with a bowl of something warm and comforting. And whether you like creamy soups, chunky soups, one pot soups or soups where the veg is roasted first, I’ve got something for everyone here. They’re all vegan and all delicious!

Roasted Pumpkin Soup

Easy to make but tastes amazing, this Pumpkin Soup with herbs, garlic and extra veggies is the perfect healthy bowl to warm you up during the chilly months!

Roasted Tomato and Garlic Soup

Aromatic and gently spiced, this Roasted Garlic and Tomato soup is thickened with whole fava beans and finished with a dash of balsamic vinegar and coconut sugar to really bring out that full tomato flavour.

Creamy Broccoli Soup

Healthy broccoli soup packed with veggies, a dash of wine and cream and tonnes of flavour! So simple but rich and satisfying this velvety vegan soup is made in just one pan in around 30 minutes! Serve with toasted vegan cheese sandwiches for comfort food heaven!

Butternut Squash and Butterbean Soup

All cooked in one pan for an easy autumn or winter meal this butternut squash and white bean soup is cosy and comforting!

Chunky Vegetable Soup

Made with store cupboard staples and vegetable leftovers this hearty chunky vegetable soup is a warming, easy meal with a delicious combination of flavours.

Cream of Mushroom Soup

Rich, thick and hearty, this vegan cream of mushroom soup is full of deliciously satisfying umami flavour from just a few uncomplicated ingredients.

Red Pepper and Tomato Soup with Roast Cauliflower

This soup has so many flavour levels. Pungent garlic, sweet red onions and tomatoes, a bit of fire from the red peppers and pops of fruity flavour from a (sort of) secret ingredient!

Roasted Tomato Soup

Thick, rich and delicious roasted tomato soup! Packed full of (hidden) veggie flavour and so simple to make. Even the vegan cheesy croutons!

Leek and Potato Soup with Crispy Vegan Bacon

Baby potatoes, fragrant leeks, herbs, garlic, apple cider and vegan cheese are all in this easy, rich and hearty soup. Add crumbled vegan bacon bits for a crispy, salty topping, turning this leek and potato soup into pure comfort food heaven!

How to store and reheat any leftover soup

Store in airtight containers and once cooled, store in the fridge for up to 5 days. Reheat on the stove or in a microwave.

Can these soups be frozen?

YES! Almost all soups can be frozen making them a great staple to have on hand in the freezer. Store in an airtight container or freezer bag. Thaw in the fridge and reheat as normal.
