Thinking of giving Veganuary a try? It’s a great way to try eating delicious vegan food for a month! Here are some of my very favourite vegan recipes. With ideas for breakfast, main meal, snacks and desserts I’ve got you covered!
There are almost as many reasons to be vegan as there are actual vegans. Almost 😉 For me animal welfare was the catalyst. I could no longer claim I loved animals yet eat them. I wouldn’t eat my dogs after all. But with so many people becoming increasingly aware of how consuming meat and dairy is impacting our environment and health as well, more and more are turning to a plant based way of eating. Trying Veganuary recipes for a month is a good way to introduce yourself to just how easy and delicious vegan food can be!
And while the best thing about Veganuary is you can do it any time of the year, lots combine it with their ‘New Year’s Resolutions’ and see trying vegan as the healthiest way to start to their year.

I thought I’d go the food route and show you just how exciting and damn delicious vegan food really is. Oh and so much easier than you might imagine.
VEGAN BREAKFAST
We’ve got sweet, savoury, quick and leisurely for the most important (and my personal favourite!) meal of the day.
Split Yellow Pea Breakfast Fritters – these Breakfast Fritters are a terrific way to pack in extra veggies (particularly ones you might not normally have for breakfast!) Serve with a couple of grilled field mushrooms and fresh tomatoes and you have a breakfast full of fibre, protein, vitamins and minerals.
Quinoa Porridge with Autumn Fruit Jam – Start your morning off in the best possible way with this rich and creamy quinoa porridge topped with autumn fruit jam. Full of flavour and energy boosting ingredients makes it a great alternative to oats!
Apple Cider Pancakes – Sweet and fluffy vegan apple cider pancakes topped with a spiced apple compote.

Blackberry Jam Breakfast Muffins – Fluffy, squidgy, lightly spiced bakery style breakfast muffins, swirled with the easiest homemade blackberry jam.

VEGAN MAIN MEALS FOR VEGANUARY
From easy meals you can eat from a bowl with just a fork while indulging in your chosen Netflix tipple to leisurely family feasts!
Roasted Cauliflower with Tahini Dressing
Spinach and Artichoke Pizza – Garlicky, herby and cheesy this vegan spinach and artichoke pizza is so easy to make, so much cheaper than takeaway and beyond delicious!
Golden Rice Pilaf – Made with simple ingredients this golden rice pilaf is a vibrant and flavourful side or main dish. It’s also easy to make and all cooked in one pan for a quick and healthy vegan weeknight meal.
Creamy Lemon Courgette Rigatoni – Creamy Lemon Courgette Rigatoni is a wonderful summery pasta. Lots of veggies all cooked in one pan in around 20 minutes for a speedy weeknight meal the whole family can enjoy!
Pasta Salad – roasting the tomatoes with veggies, garlic and herbs gives a wonderful depth of flavour to this rich vegan pasta sauce. It’s also just as lovely cold, making this one of my lunch box favourites!

VEGAN SNACKS FOR VEGANUARY
There’s a growing abundance of vegan snacks available these days but why not have a go at making your own. They’re easier than you might think, you know exactly what’s going in them and if you make them while you’re alone there’s no-one to judge you if you scoff the lot!!
Spicy Roasted Cashew Nuts – full on flavour, roasted with fiery spices and avocado oil – a super healthy and super simple snack!
Tahini Pecan Chocolate Chip Cookies – these chewy vegan choc chip cookies with tahini and pecans are super easy to make with simple ingredients and take less than 15 minutes to bake! I personally find it almost impossible to not inhale these straight off the baking tray!
Crunchy Peanut Butter Shortbread – Buttery, melt in the mouth vegan peanut butter shortbread cookies made with just 4 ingredients!
Biscoff Cupcakes – These vegan Biscoff Cupcakes with Biscoff Buttercream Frosting are a spiced cookie butter lover’s dream! Soft and fluffy golden sugar cupcakes topped with whipped buttercream – the perfect afternoon treat!
Vegan snacks can be as easy as store bought hummus and some carrot sticks. VEGAN DESSERTS FOR VEGANUARY
Perfect for satisfying the most ardent sweet tooth, these vegan desserts are rich and decadent.
(If you make nothing else, I STRONGLY urge you to make this)
Croissant Bread Pudding – Homemade vegan croissant bread pudding is sweet, rich and custardy and studded with dark chocolate chips. Make ahead and serve with a warm berry compote and whipped cream for a special occasion dessert.
Vanilla Cake – Soft and fluffy vegan vanilla sheet cake or tray bake is an easy buttery sponge, topped with whipped icing and fresh fruit. Perfect for birthdays, afternoon tea or simply because!
Vegan Basbousa – A traditional Middle Eastern cake make with a base of semolina and yoghurt, Basbousa is sweet, light and fragrant and so so moist! It’s also studded with almonds and soaked after cooking in a sticky lemon syrup.
Raspberry Meringue Pie – A deliciously summery vegan twist on classic lemon this raspberry meringue pie delivers slice after slice of pretty pink heaven!

Congratulations if you made it this far down the list! A lot of people (myself included) thought there would be so much you’d have to give up, even coming from a vegetarian diet. How can you bake without eggs and butter? What about cheese? And tofu – well that’s just blergh isn’t it?!
