We have a combination of healthy and fresh alongside decadent and comforting.  February in season produce lends itself perfectly to so many easy vegan recipes. We’ve got make ahead breakfasts and light, easy lunches.  There’s also hearty and warming soups, simple but delicious dinners. VEGAN BREAKFAST RECIPES FOR FEBRUARY

Chocolate Orange Granola – February is generally still cold enough to want something warm for breakfast which, for me, is more often than not porridge topped with homemade granola.

Apple Crumble Oats – one of my very favourite warming breakfasts.

Tofu Scramble – aka vegan scrambled eggs. Confession: I often have this for dinner too!

Chocolate Pancakes – a vegan and gluten free chocolate lovers dream!

VEGAN LUNCH RECIPES FOR FEBRUARY

Teriyaki Mushroom Tacos – fresh and filling tacos with saucy mushrooms and red cabbage slaw.

Warm Pear Salad – so much flavour and texture in one delicious salad.

BBQ Cauliflower ‘Wings’ – deceptively simple but oh so tasty!

Shepherd’s Pie Jacket Potatoes – twice baked and perfect for meal prep, these will warm you up from the inside!

Garlic Mushroom Sourdough Pizza – quite possibly one of THE best pizzas I’ve ever had!

Spicy Hash Brown Bake – jam packed with seasonal veggies in a rich tomato broth all topped off with crispy, cheesy hash browns.

Black Garlic Udon Noodles – king oyster mushrooms and red cabbage in a heavenly black garlic sauce.

Lentil Sweet Potato Curry – made with simple ingredients and roasted sweet potatoes for extra flavour this easy vegan curry is full of warming spice.

VEGAN DESSERT & SNACK RECIPES FOR FEBRUARY

Baked Rice Pudding – if this isn’t the ultimate comfort food I dunno what is! It’s creamy, full of warming spices and served with a very versatile fruit compote.

St Clements Curd Cake – make the most of citrus season with this light fluffy cake swirled with vegan curd.

Spiced Vegan Apple Cake – one of my most popular recipes with everyone who’s made and eaten it!

Orange Scones with Fig Jam – soft apricot and orange scones with bright, zesty flavour. An easy scone recipe all made in one bowl with an equally easy spiced homemade fig jam.
