One Pot Meals

These easy, vegan one pot meals are designed to just make life easier! Simple to prepare, minimal attention and clean up. But all thoroughly delicious for the whole family to enjoy!

So.  I love cooking.  It’s in my blood, bones and DNA.  But boy do I get tired of the washing up.  Do you handwash or are you dishwasher people?  I have a dishwasher here but never even turned it on (I currently rent and it came with the house).  It feels awfully extravagant to put the dishwasher on for 1 person.  So I don’t.  Therefore I’m always looking for ideas that involve minimal clean up.  And is why I love and cook one pot meals as often as I do!

There’s also generally enough for leftovers the next day so even less washing up.  Boom.

It’s also mostly evening meal ideas I was aiming for here but I’m going to start by throwing in a couple of breakfast ideas.  Both of these I batch make in advance because I’m beyond not a morning person so the easier I can make breakfast the better.  It also means I don’t default to the ‘too much toast’ either.

One Pot Breakfast Recipes:

Apple Crumble Oats. As easy as they are delicious, this is one of my go to breakfasts.  Especially in the autumn as it’s full of those wonderfully warming spices and soft apples.  Heaven.

Spiced Baked Beans.  Both sweet and savoury with a mild spicy kick, these homemade baked beans are made with just a few store cupboard ingredients but absolutely packed with flavour!

One Pot Meals

One Pot Soup Recipes:

White Bean Soup with Leeks and Pesto.  This is a wonderfully rich and creamy soup that’s super quick and easy to make.

Minestrone Soup.  If you find yourself with left over veggies this minestrone soup is perfect and full of classic Italian flavours.

If you like one pan soups you might also like this wonderfully creamy Broccoli Soup, though it does require a blender to finish it off, but the extra step is so worth it.  Served with toasted cheese sandwiches for comfort food heaven.

One Pot Meal Ideas:

Gnocchi with Sprouts and Sage Butter.  Crispy pan fried gnocchi with tender Brussel’s sprouts, hints of lemon and garlic in a rich sage butter sauce. An easy and speedy lunch or cozy evening meal made with just a few, simple ingredients but absolutely full of flavour.

Cauliflower Cheese – with a twist!  Baked until crisp and bubbly, this vegan cauliflower cheese with leeks, sprouts and sausages is the ultimate comfort food.

Teriyaki Noodles and Broccoli – a super quick, easy and healthy weeknight dinner that your entire family will absolutely love! These tasty vegan noodles are even better than takeout with crisp broccoli, and a delicious sauce all cooked in one pan!

Sausage Casserole with Pearl Barley.  A hearty and comforting one pot sausage casserole with lots of veg, plump pearl barley and a rich red wine sauce. Perfect winter warmer for the family.

One Pot Meals

The Easiest Tomato Risotto.  Just an occasional stir rather than hawk like attention is needed for this easy one pan tomato risotto, made with simple, pantry ingredients.

Lemon Courgette Rigatoni.  A wonderful summery pasta. Lots of veggies all cooked in one pan in around 20 minutes for a speedy weeknight meal the whole family can enjoy!

Golden Rice Pilaf – made with simple ingredients this golden rice pilaf is a vibrant and flavourful side or main dish.

Sausage and Mushroom Stroganoff – creamy, rich, hearty and SO tasty, this vegan mushroom stroganoff is deceptively easy and quick to make.

Butternut Squash and Gnocchi Bake – one of my cooler weather favourites, this comes together really quickly and can be happily bubbling away in the oven while you put on your favourite slippers and open something chilled and fruity!

Creamy Tomato Pasta – dinner made simple with this creamy tomato pasta.

Garlic Sesame Noodles – these noodles are healthy, vegan and take just 15 minutes to make! And with just a few store cupboard ingredients they’re perfect for busy days.

Creamy Vegan Pasta Alfredo – no nuts, no cauliflower, just simple pantry ingredients!

Pumpkin Risotto – easy, creamy, one pan pumpkin risotto with white wine, sage and pearl barley.

Vegan ‘Chicken’ Pot Pie – this pot pie is packed with veggies, topped with flaky pastry and absolutely full of flavour!

Carbonara Ramen – of all the one pan recipes here, this carbonara ramen is perhaps the easiest!  It needs only a handful of simple ingredients and using ramen noodles means it can all be cooked in around 20 minutes. It’s perfect nourishing food after a busy day but tastes special enough for date night too!

Spicy Peanut Noodles – perfect for when you’re hungry but short on time, these 10 minutes noodles are gently spiced but full of rich flavour.

Meatball Pasta Bake – a really easy one pot vegan meatball pasta bake ready in 40 minutes. Perfect for weeknight plant based meals and leftovers for lunch the next day!
