Delicious vegan summer recipes for these warmer days and nights. From breakfast to dessert you’ll find plenty of inspiration to celebrate the season and make the most of summer fruits and vegetables!

The produce is one of my very favourite things about summer.  Ripe peaches, juicy strawberries, picnic and alfresco food and vibrant summer salads.  They’re all represented here!  Are you planning a beach trip?  Or just lounging in your garden?  How about enjoying a warm summer evening with friends or just chilling with a sofa picnic?  You will find plenty of summer recipes here that are just as easy to prepare as they are delicious to eat!

Fruity Vegan Breakfast Recipes

What’s not to love about fresh, fruity breakfasts!  Celebrate the start of every day with the season’s finest.

Summer Fruits Pancake Tacos – dinky little pancakes, folded like tacos and filled with gorgeous summer fruits, whipped vegan cream and chunks of dark chocolate.  Can I get a heck yeah for dessert for breakfast?!

Strawberry Cinnamon Rolls – soft, fluffy dough with a sweet homemade jam filling these rolls are such a breakfast treat!

Raspberry, Apricot and Almond Baked Oats – baked oats in general are one of my favourite breakfasts.  Make a couple of batches at once and pop in the freezer for quick and easy breakfasts for days to come!  They make a nice snack too for afternoon hungries!

Blueberry Muffins – soft, squidgy bakery style muffins, oozing with blueberries.  Delicious breakfast standby for busy mornings.

Strawberry and Chocolate Baked Oats – all mixed in one bowl this delicious breakfast is literally having your breakfast cake and eating it!  Deceptively healthy .. gluten free too!

 

Passion Fruit and Berry Breakfast Pastries – it’s hard to limit yourself to just one (or two) of these … crisp puff pastry filled with passion fruit flavoured cream cheese and fresh raspberries.

Vegan Summer Lunch and Dinner Recipes

For a delicious al fresco lunch, picnic or leisurely dinner look no further than these vegan summer recipes …

Warm Peach and Sweet Potato Salad – crisp leaves, warm peaches and toasted pecans with a lovely balsamic dressing.

Wheat Berry Summer Salad – plump little wheat berries mixed with tonnes of veggies, herbs and a creamy garlic, mustard and tahini dressing.

Cheese and Potato Pies – perfect for summer picnics and lunchboxes.  Crisp puff pastry filled with soft onions and potatoes and melty vegan cheese.

Butterbean and Arugula Salad – a simple but delicious summer salad with tomatoes, toasted walnuts and a bright and zingy red pepper dressing.

Creamy Lemon Courgette Rigatoni – a wonderful summery pasta, packed with veggies and all cooked in one pan in around 20 minutes.

Herb and Lemon Tomato Salad – tomatoes really come into their peak in the summer and if you can grow your own there’s no substitute for the flavour!  Here I’ve combined them with zesty lemon, lots of fresh herbs, toasted seeds, a mustard dressing and crunchy garlic croutons.

BBQ Cauliflower Wings – A little bit spicy and full of flavour, these meat free BBQ cauliflower wings are great for both feeding a crowd or a solo movie marathon!

Roasted New Potato Salad – I promise you, this is no ordinary potato salad!  Crisp herb and lemon roasted potatoes with fresh tzatziki and quick pickled onions.  I could permanently live off this!

Lemon Herb Orzo with Roasted Tomatoes – creamy herb orzo topped with toasted pine nuts and vegan feta for bright, fresh pops of summery flavour in every bite!

Pear Salad with Red Cabbage and Homemade Croutons – warm roasted pears, crunchy red cabbage, garlic croutons and a tangy mustard dressing.  This salad is SO yum!

Vegan Desserts and Treats

End your meal (and day) in style with these fruity, easy desserts and treats.

Raspberry Muffins – the easiest homemade jam swirled into almond muffins.  These are such a summer favourite for breakfast, dessert or an afternoon treat!

Roast Nectarines – griddled and roasted nectarines (or peaches) topped with homemade ‘nice cream’ and caramelised walnuts.  YUM.

Rhubarb and Strawberry Fool – a deliciously creamy dessert whipped up in no time!  Homemade jam swirled through vegan cream makes this a light and very fruity summer dessert.

Peach Upside Down Tarts – Delicious vegan desserts don’t come any easier than these peach upside down tarts. The herb cream cheese adds even more garden fresh flavour!

Strawberry Cheesecakes – raw, vegan and gluten free, these mini strawberry cheesecakes with a nut and chocolate base are smooth, creamy and SO easy to make!

Pina Colada Ice Lollies – refreshing, kid friendly, non-alcoholic lollies.  A doddle to make but guaranteed to get you in the mood for summer!

Blueberry Lemon Rustic Tarts – these sweet little vegan rustic tarts are full of sweet blueberries, lemon and mint wrapped in light, flaky puff pastry.  So easy to make for a quick summer dessert.

Vegan Summer Recipes

No-bake Mango Cheesecakes – a golden biscuit and white chocolate base with a silky smooth mango topping.

Peach Tart – super simple homemade pastry brimming with fresh, juicy peaches served with a warm, sweet orange and cardamom drizzle.  Add ice cream for ultimate indulgence.

Lemon and Blueberry Baked Donuts – these are non yeast, more cake donuts which means they’re super simple and quick to make. And they’re absolutely delicious warm or cold with a cuppa for breakfast or an afternoon vegan treat!
